Heat a large skillet on the stove top on medium high heat, add 2 tbsp olive oil. Sauté the pieces of red pepper for 3 minutes, then add in the sliced zucchini. Continue sautéing an additional 3 minutes before adding 1 more tablespoon of olive oil, the chicken sausage and the shaved corn. Sauté until there is a nice char on the sausages.
